Katarzyna Cwiertka is Lecturer at the Centre for Japanese and Korean Studies at Leiden University , and specializes in social history of modern Japan and Korea with particular focus on food and cuisine.  She is the author of Modern Japanese Cuisine: Food, Power and National Identity (Reaktion Books, 2007).
